Since 1862 the Cistercian Trappist monks of Chimay have been developing the production of Trappist beers, and now I get to enjoy this beer whenever I want. My friend Trader Joe sells it at his store. Last night, my roommate and I stayed up late drinking Chimay, talking about all sorts of fun things, and being a lil crazy. We finally hit the sack at 1am.
